Vanilla Curing Process Uganda

  1. Killing or blanching โ€” pods briefly in hot water at 65ยฐC to stop biological processes
  2. Sweating โ€” pods wrapped in blankets and stored in closed boxes for several days for enzyme development
  3. Drying โ€” pods spread on mats in sun for 2 to 3 hours daily over several weeks
  4. Conditioning โ€” final storage in closed boxes for 2 to 3 months to develop full flavour
